My New Favorite Vegetable And It’s Surprising Health Benefits

Growing up I was never a huge fan of vegetables besides carrots and never would I have considered trying a vegetable like eggplant.  My new favorite vegetable however is eggplant.  There are also so many reasons why this vegetable is very healthy that I never would have thought of.  Although this vegetable is sold in most grocery markets year round, its primary season is fall.  It is known for its bitter taste and spongy texture.

Health benefits of eggplant

  1. Eggplants are full of many vitamins and minerals including fiber, manganese, potassium, folate, vitamin K, copper, vitamin B6, vitamin C, magnesium, tryptophan and vitamin B3.  Not only do they have all those vitamins and minerals, they also have phytonutrients in them which have antioxidant activity.
  2. One of the phytonutrients found in eggplant skin called nasunin has been found to protect cell membranes from damage which is important for brain function.
  3. Eggplants have been found to be beneficial for cardiovascular health by reducing “bad” cholesterol in the blood stream thereby improving blood flow.
  4. The fiber found in the skin of eggplants is good for digestive tract regulation.
  5. Eggplants have been used for managing diabetes since it is high in fiber and low in soluble carbohydrates.

Best ways to enjoy eggplant

  1. Eggplant tastes best grilled, roasted or baked.
  2. Be careful when cooking eggplant by frying or sauteing them as they tend to act like sponges and absorb all the oils.
  3. Eggplant Parmesan is a good healthy choice if the eggplant is grilled first and then baked with light breading and lighter cheese.  Be careful of restaurant eggplant parm however as theirs is normally fried first and higher in calories and fat as a result.
  4. Eggplant can be stuffed as one would stuff a pepper or grilled.  It can also be used in dips and sauces.
  5. Layered eggplant with fresh mozzarella cheese with a light balsamic vinaigrette dressing drizzled on top makes for a great afternoon snack!
